Lucky Charm Bars
Servings: 20 bars | Prep: 10 minutes

Ingredients
- 4 tablespoons (57 grams) butter
- 5 cups (10 ounce package 283 grams) miniature marshmallows
- 6 cups Lucky Charms cereal
- 12 ounces (151 grams) white chocolate or white almond bark

- Line a 9×13 baking sheet with parchment paper. Extend the paper above the pan, and grease it with nonstick cooking spray. Set aside. Pull out about ¼ cup of the marshmallows from the cereal. You will add this to the top of the bars separately.
- In a large pot, melt the butter over medium heat. Once the butter is melted, add the marshmallows and stir constantly until melted and smooth. Remove from heat.

- Add Lucky Charms cereal to the marshmallows and stir well until fully incorporated.

- Pour mixture into the prepared 9″ x 13″ pan. Use a greased spoon or spatula to spread the mixture into an even layer. Scatter the remaining marshmallows that you pulled out from the cereal and gently press them into the top of the bars to secure them a bit.

- Allow the bars to fully cool down and set (about 30 minutes to an hour.) Pull bars out of the pan by lifting the parchment paper. Cut the bars into even pieces.

- Melt the chocolate in 30-second increments in the microwave, stirring between every 30-second increments. Continue until fully melted. Dip the bottoms of the bars into the chocolate, making sure to come up the sides of the bars just a bit so you can see them from the sides of the bars.
Want to switch it up?
I have three extra ideas to add extra festive fun to these great treats!
- When you think of St Patrick’s Day party food, you think GREEN! With that in mind, you could add green food coloring to the white chocolate, to make some green treats. Green foods are a staple of St Paddy’s Day celebration and it’s so easy to make these bars green. You could also add some green sprinkles to the top of the bars, or some green M&M’s to add some extra crunch. Maybe even melt some green candy melts and drizzle them on top, to add even more color. Whatever way you add green to these fun treats they will look and taste delicious.
- If you’re not overly keen on the sugar levels of Lucky Charms for your little ones, you could swap half of the Lucky Charms out for some tasty Rice Krispies. This way you still get some tasty cereal treats without the sugar levels of Lucky Charms.
- If you’re looking for a more subtle change, you could sneak in some mint extract to make mini shamrock shake flavoured bites. The mint flavor is more like traditional Irish foods and pairs deliciously with the marshmallows and sweetness of the Lucky Charms. If you are going for a minty taste, why not also sprinkle some crushed mint Oreos on top. Whatever you do with the recipe it’s bound to make a delicious festive dessert for St Patty’s day!
Serving Ideas For St Patrick’s Day Treats For Kids
The best part about this recipe is that it can be molded in any shape you wish. You can choose squares, rectangles, four-leaf clovers, or a leprechaun’s pot. Whatever you feel like cutting the treats into (and whatever you can do with your skill level) the rainbow sky is the limit.
Whatever shape you choose to cut the bars, placing them on a serving board with a pot of gold cupcakes, shamrock pretzel pops, pot of gold truffles and other fun St Patrick’s Day treats you’re sure to impress your guests (even more when they find out the kids helped make them).
You could also serve them on fun leprechaun paper plates that the kids have crafted.
