We are using the cake mix as an easy method to make cookies without weighing out loads of ingredients. This makes it a great recipe for the kids to follow and there is less clearing up for you!
Using Christmas colors of red and green is an easy way to theme the cookies but you can also switch up the colors to match your favorite Christmas theme.
These easy cookies are a family favorite of ours as the basic formula can be adapted to give a different look to the finished result (see below for ideas). Also, using a boxed cake mix makes this a simple and easy recipe that anyone can make. It’s the perfect solution when the kids get bored on a rainy day. You get delicious chewy cookies with a festive look.

- You could take them to school for the class Christmas party. Pack them in an airtight tub with some parchment paper between the layers to stop them from moving about too much.
Tips for making Christmas cake mix cookies
- Don’t follow the instructions on the box of cake mix.
- If you don’t have a 1 inch cookie scoop, get the kids to make balls of dough with their hands.
- Try to get the dough balls all the same size so that they all cook at the same time.
- Make sure that the green food coloring you are using is a GEL food coloring to give a rich, strong color to your cookie batter.
- Cake mixes up to 18oz can be used including the standard 15oz box.

Different ways to make these festive cookies
- You could swap out the heart sprinkles for any other decoration such as white chocolate chips
- You can omit the food coloring or use a different color. Blue food coloring would look great with white snowflake sprinkles for decoration.
- You could use a chocolate cake mix. If you do this, then omit the coloring and decorate with powdered sugar for a snow effect.
- You could use a red velvet cake mix and no food coloring to make red velvet cake mix cookies. Sandwich them together with cream cheese frosting
Christmas Cake Mix Cookies
Prep Time: 20 min
Bake Time: 10 min
Makes: 24 cookies
Ingredients:

1 box white cake mix
Neon green, or regular green gel food coloring
2 eggs
½ cup vegetable oil
Heart sprinkles
Instructions:

- Preheat the oven to 350 degrees.
- Line an ungreased cookie sheet with parchment paper and set aside.
- In a large mixing bowl, mix together white cake mix, eggs, and vegetable oil with a wooden spoon until well combined.
- Drop in several drops of food coloring, and fold into the cookie dough until well combined. If you wish, you can add a small amount more to get a stronger color.

- Use a 1 inch cookie scoop to scoop out balls of dough and place them onto the parchment paper, at least 2 inches apart.
- Bake the cookies for 9-10 minutes, until the bottoms of the cookies begin to turn golden brown.
- Remove from the oven and allow the cookies to cool for about 5 minutes.

- Push a heart sprinkle into the middle of each cookie
- Move the cookies to a wire rack to finish cooling completely.
You can store the cookies in an airtight container for up to 5 days..
The cookies can be frozen for up to 2 months. Place the cooked cookies in a freezer bag, then thaw at room temperature.
