Pot of Gold Oreo Truffles
Servings: 18 mini-pots | Prep Time: 30 mins

Ingredients
- 24 Oreos
- 8oz (227g) Cream cheese, softened
- 12oz (340g) Chocolate almond bark or chocolate chips
- 3 Airhead extreme strips (cut about 2” lengths) or 24 bite-sized candies
- 1/4 cup (30g) Gold confetti sprinkles or green sprinkles

- Line the baking sheet with parchment paper.
- Crush Oreos until fine crumbs using a food processor or other preferred method.

- In a medium bowl, combine crushed Oreos, and softened cream cheese until fully incorporated.
- Scoop Oreo mix into 1 1/2 tbs balls and chill for about 30 minutes.

- Using a toothpick and your fingers, try to shape the balls into pots. Press in the toothpick around the top – about 1/8-1/4”. Push the top up if you can and flatten the top surface. It won’t be perfect, and that’s okay
- Place the almond bark into a small microwave-safe bowl. Microwave for 30-second intervals, stirring between each session until it is fully melted.

- Drop the little Oreo pots into the chocolate, and use a spoon to make sure the truffles are fully covered in chocolate, and then lift out and onto the parchment paper.
- Let the truffles set for about a minute, but make sure it doesn’t set all the way. Drop the confetti sprinkles onto the flat surface of the pot. If you put the sprinkles on right away, they may just slide right off.

- Place the airhead into the chocolate and hold it in place for a few seconds to make sure it is secure. If you use the strips you can fold it back so that it doesn’t flop over.
- Allow them to set fully. Once they are fully set, you can use a sharp knife to trim the excess chocolate off the bottoms and clean it up.
Notes: Keep the truffles refrigerated in an air-tight container until just before serving. If the chocolate starts to get white spots, run a hairdryer over them on a low setting for a few seconds and they will disappear very quickly.
Want some other ways to switch up this recipe?
I have four extra ideas to add extra festive fun to these great treats!
- Why not use white chocolate instead of the almond bark? If you use white chocolate or white chocolate chips you can add some green food coloring and make your pot of gold into some green treats. Make these the perfect treat to be served at a Saint Patrick’s Day party as they are bound to stand out. You could also use some green candy melts to get the same effect.
- You could also use a box of Lucky Charms. By sprinkling some Lucky Charms marshmallow on the tops of your pots of gold you can turn these delicious bites into some rainbow snacks and have so much fun in the process. These colorful marshmallows will look great with either the original recipe or by switching out the almond bark for the white chocolate idea.
- You could instead pop a chocolate coin on the top of each pot of gold for a different effect compared to the sprinkles.
- You could add some mint extract or peppermint extract to your almond bark and use mint-flavored Oreo cookies as well. This way you make your shamrock shake inspired easy St Patrick’s Day treats.
Want some serving Ideas?
- Seen as these are little pots of gold, a great way to serve them is at the end of the rainbow. Using rainbow napkins or a rainbow serving tray, these little truffles will look amazing, and everyone will credit you for such a fun idea.
- The perfect way you could also serve these little tasty bites alongside your other favorite festive dessert. Why not check out these gorgeous lucky charms bars or other easy recipes? Whatever your favorite foods are for this holiday these little truffles are sure to be a popular tasty treat.
- Or why not try your hand at crafting and make some matching pot of gold plates to display your truffles on.
