This is a super easy strawberry spoon cake recipe kids can make at home with a little adult help. It combines fresh berries with basic pantry ingredients and requires only minimal effort making it one of the best recipes for beginners.

The pudding cake would make a great dessert for a Summer BBQ party. You could also serve it in a blue dish with whipped cream or a scoop of vanilla ice cream for a July 4th patriotic color theme pie.

Ingredients:

2 cups fresh strawberries sliced

⅔ cup brown sugar

1 cup all purpose flour

½ cup 2% milk

½ cup unsalted butter melted plus more for greasing

1 tsp baking soda

½ tsp salt

200g plain flour

100ml semi skinmmed milk

100g unsalted butter melted plus more for greasing

1 tsp baking powder

½ tsp salt

METHOD:

  1. Ask an adult to preheat the oven to 350 degrees F
  2. Grease a 9-inch (22cm) pie plate with a piece of butter and set aside
  3. Wash and carefully slice the hulled strawberries.
  4. Combine strawberries and ⅔ cup of the brown sugar in a medium bowl and stir until strawberries are coated

  1. Lightly smash the fresh strawberries with back of a fork and let sit for 10 minutes until nice and juicy

  1. In a separate large bowl, mix the flour, milk, melted butter, baking soda, and salt with a spoon until they are well mixed together

  1. Add flour mixture to the pie pan and then pour strawberries and sugar on top of the cake batter in an even layer
  1. Get an adult to put the whole thing in the oven
  2. Bake for 20-25 min until golden brown
  3. Let it cool for 5 minutes then serve the cake with whipped cream or ice cream

Leftovers stay fresh, covered tightly, at room temperature up to 3 days and will keep in the refrigerator up to 5 days.
